SPAM MUSUBI
Our go-to camp morning snack. Made at home or at the campsite, wrapped individually, and ready to grab from the cooler before the stove is even lit.

PREP AT HOME
- Add a little vegetable oil to a pan (I use cast iron) and lightly fry the Spam slices until browned on both sides over medium heat.
- Remove the spam slices and drain on a paper towel. In the same pan, combine the soy sauce, mirin and sugar together and mix to combine. Bring to a boil, then lower heat to medium-low until slightly thickened.
- Add the spam slices back to the pan to coat with the thickened glaze. Turn off heat after 1 minute and leave in the pan until ready to use.
- Take one of the cut nori sheets and lay it on a clean surface. Arrange your musubi mold perpendicular to the nori strip, on the bottom 1/3.
- Fill the mold with about 1/2 cup of rice and press down very firmly so the rice is packed tight. If using an empty spam container, add the same amount of rice and use your fingers to shape the rice into a tight patty.
- Sprinkle some furikake (if using) on top of the rice. Alternatively, you can mix 2 tsp of furikake into the warm rice in advance if everyone is ok with this addition (this is how I do it).
- Add a slice of spam (which should be well-coated with the glaze) and fold over the nori to keep everything in place. You can seal the edge of the nori with a dab of warm water if needed.
- If not eating right away, wrap each in plastic wrap to save for later. Repeat.
AT CAMP
- Keep them cold in the cooler.
- Unwrap and eat. That's it.
Plan B
A banana and a granola bar always live in the snack bin.
